Keto Zuppa Toscana Recipe

Zoopaahh Tosscannaahh! Who doesn't love saying that? Literally translated "Tuscan Soup." While the original dish includes zucchini and beans we love our American take on the recipe. Filled Loaded with bacon, sausage, potatoes, and kale! This is comfort food for the whole family. This is a favorite in our home and so easy to prepare. Whip it up in 30 minutes or turn it into a crock pot meal.

Heavy Cream vs Whipping Cream

What’s the difference between heavy cream and whipping cream? Not much. Heavy cream is 36% fat while whipping cream only contains 30% fat. When given a choice, go for real heavy cream it's a better option for keto.

Ingredients
  • 1 large onion, diced
  • 1 lb sausage 
  • slices bacon, diced
  • Leftover bacon grease
  • 4 cups diced potatoes
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale

 


Instructions

  1. Fry bacon over medium heat. Keep leftover grease.
  2. Cook sausage until no pink remains. Add onions and garlic to sausage. Sauté and set aside.
  3. In a large pot add bacon bits, grease, sausage, potatoes, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer uncovered until potatoes are softened.
  5. Stir in Kale.
  6. Stir in heavy cream 5 minutes before ready to serve.
  7. Garnish with additional bacon if desired.
