4 Large Eggs
2 Egg Yolks
½ c Stevia
¼ tsp Sea Salt
4 c Unsweetened Almond Milk
2 ½ tsp Vanilla Extract
½ tsp Nutmeg
½ c Heavy Cream
In a large saucepan, whisk together: eggs, yolks, stevia and sea salt. Slowly whisk in almond milk.
Using a candy thermometer, cook over low heat, stirring constantly for 15 minutes at 165 F.
Stir in vanilla extract and nutmeg.
Cover with plastic wrap and chill for 3 hours.
Before serving, gently fold in cream to egg mixture.
